Ah ok, I am in the Hunter Valley in NSW about an hour and a half from Sydney. I lived in Adelaide many years ago and my bro lives in Melbourne, both beautiful cities in their own right. Where abouts did sis live mate?

I will go hunt that recipe.

Sweet Potatoes with Marshmallow

Imperial                                               

                                                     




    6.61 lb (pound) sweet potatoes
    5 tablespoon(s) Vegetable oil
    4 tablespoon(s) Lime juice
    2 teaspoon(s) Ground cinnamon
    3 oz (ounce) butter
    1 tablespoon(s) Maldon salt
    10 oz (ounce) Mini marshmallows (1 packet)


Method

    Preheat the oven to gas mark 7/220°C. Prick or puncture the sweet potatoes with a fork and put them each on to a piece of foil large enough to wrap them in. I find these cook best in individual parcels, so just be prepared to make a lot of them: I find the weight above means you’re dealing with 8 or 9 potatoes in one go.
    Divide the oil between the foil sheets and then rub or turn the sweet potatoes in it and wrap into baggy but well sealed parcels. Put them on to a baking sheet or two and roast until the potatoes are soft and cooked through, approximately 1–1˝ hours. This way of cooking the potatoes, apart from being very easy, means that you get maximum, un-watered-down flavour.
    When the sweet potatoes are cool enough to handle, strip away the skin and fork or squeeze and pick the flesh into a large bowl. Pour in any syrupy juices from each of the foil parcels.
    Add all the other ingredients except for the marshmallows, and mix together to make the mash.
    Spoon the sweet potato mash into an ovenproof dish: I use an old rectangular one of 34 x 20cm and about 6cm deep, but any you have around that size would be fine.
    Smooth the top of the mash and cover with the mini marshmallows.
    Bake in the hot oven for 10–15 minutes by which time the marshmallows will have coloured on top and melted together, like a rippled, bronzed duvet.

So, I tested the pudding shots on many drinking friends. I, as you might know, don't drink much. I was a little afraid because when I tried one, I liked it. It didn't taste like booze.

The drinkers liked it because it was actually half booze.

I think it would be good to make with vanilla pudding, too. That way you could have some variety on the tray. Might be good with vanilla vodka if you were using vanilla pudding.

The recipe said it was "mousse consistency" but you could actually drink the things and I wouldn't call it mousse-ish.

Very tasty and a way to treat your friends to something a bit different.

Yeah, apart from the fact I didn't know what it was, it was apparently a 100 times better than my xmas fudge. ::) ::)

Of course it was Ma, my rocky road is world famous.  ::) I gave you the recipe woman, do you have no filing system?  :P

Patti the pudding shots do sound nice indeed, I will set some up. We do a thing here called jelly shots. One year I did pineapple jelly with Malibu, they were a hit too. I do like to add grog to my recipes, gives them an extra pep at times.

I did one for my neighbour, you can do adult and naughty as well.  He was naughty. Loved it. I didn't find the naughty one to be as good but it does say the recipient has a chance to redeem themselves before Xmas though.  :D :D
